Do It Yourself Chipotle-Style Burrito Bowl

Ok - I don't like to brag, but dinner tonight was DELISH! I mean, I might be bragging but only because this is my blog and I do what I want. It was all really super simple.

1lb ground turkey 
1 cup wild rice blend 
I bag of frozen veggies (Sante Fe Medley - black beans, corn, onions, red peppers, green peppers) 
Taco seasoning of choice 
2 average sized tomatoes 
1 red pepper 
1 green pepper 

I would start the wild rice first. I used 1cup rice blend & 2 cups water and it said to get the rice to a boil and simmer covered for 45 minutes. I bought it bulk in the organic bins at my local Hy-Vee. 

Then, I cooked the ground turkey in my skillet until it was done. I added the tomatoes and peppers (diced) and I used Margarita's brand Taco Seasoning. 

The frozen veggies were able to be microwaved in the bag and only took 6 minutes.

Then I just layered it up in a bowl as I would have them do at Chipotle. Rice, meat, and veggies. I didn't have salsa but I would add that if I had it. It honestly didn't need it at all though. I garnished with fresh chopped Arugula and Feta Cheese. 

I had to stop myself from eating a second bowl - it was a tasty little treat! And I am positive that this will be one leftover I won't have ANY problem eating. As a matter if fact, I am looking forward to it!! 

I need to see if I can find a recipe builder online that will add up calories and what not. If I'm not mistaken, used to have that feature. I will look into that and I will update with nutrition facts when I get a chance.
