Feta-cado Wrap

I swear, if I were to open a wrap shop, I could be a billionaire. Ok, maybe not entirely a billionaire but I am damn good at concocting food sometimes. So, first, let me entice you with the food porn, then I will tell you how it was done. Obviously, as a mother of two children I don't have time for complicated meals so it was super simple.

4 Chicken Breasts (boneless, skinless) 
2 T Light Olive Oil 
2 T Salad Vinegar 
2 T Grill Mates Montreal Chicken seasoning 
1 can of organic Petite Diced Tomatoes - drained 

Fresh Baby Spinach 
Fat Free Feta Cheese 
1 avocado 

First, I placed 4 chicken breasts (I buy Smart Chicken, but any kind is fine) in my  skillet. I added the oil and vinegar and sprinkled one tablespoon if the Montreal Chicken on the chicken breasts. Let cook for a couple of minutes on that side. Flip the chicken breasts and season the other side. Let cook for maybe 5 minutes covered. I don't even have a cover for my skillet, I just use a flat crock lid. 

Add the drained tomatoes and cover again. Turn heat to medium and let summer. 

While that's cooking I sliced up an avacado and laid out my tortillas. Once the chicken was done, I put as much chicken as I desired in each wrap atop the cooked tomatoes. Surrounded with the desired amount of Spinach, Avacado, and Feta Cheese. It. Was. Delicious! 

I recommend using Ezekiel wraps, whole wheat, or low carb. Most important - just choose wraps with ingredients you recognize and if it's low cal/ low carb, great.
